Hints of strawberry with a black tea and earthy finish are the distinctives of Sidamo, which hails from the south central mountains of Ethiopia. This coffee is shade grown and dry processed. Dry processing is when the fruit (cherries) is laid out on raised beds in the sun to dry. When dry, the beans are easily removed. This process lends to some really interesting tastes. Since this is a wild grown coffee, it by grown organically by tradition. You also have a nice chocolate and citrus finish with this coffee. The coffee is roasted full city, right before second crack begins.
